A great cake recipe for any occasion:

Debone, skin and divide trout into 4 pieces each.

Stir flour and liquid for the sleeping skirt until smooth (mixer). Add the eggs as well as the egg whites and mix heartily for another 3 min. Heat a frying pan dry, melt a nut-sized piece of clarified butter and swirl until the bottom of the pan is covered with fat.

Pour a full soup ladle of the thin batter into the frying pan, swirling to quickly disperse and shake the frying pan to prevent the pancake from setting.

While frying over medium heat, use a wooden spatula to loosen the edge of the pancake from the frying pan… Toast for about 3 min over medium heat. Turn pancakes to the other side and bake repeatedly for 2 min. Bake 8 pancakes in this manner, cool until lukewarm.

Top 1/3 of each pancake with a quarter of the trout, then spread a tablespoon of cranberries on top. Fold the filling exactly into the pancakes.

Mix the egg yolks with two teaspoons of water and brush the tops of the filled pancakes with it. Place them on the baking tray under the broiler for about 5 minutes until they are lightly browned.

Serve with lettuce.
