Prepare the pepper sauce: Melt 1/2 tablespoon butter in a frying pan. Sauté shallot, add 1 tablespoon peppercorns. Add stock and wine, bring to the boil, reduce liquid to about a quarter, strain, set aside.

Just before serving, make the pepper sauce: Pour prepared sauce back into skillet. Bring liquid to a boil, remove skillet from heat. Reduce temperature.

Add butter pieces in batches while stirring. While doing this, pull skillet away first and then place on plate again briefly to heat sauce just slightly, it should not boil.

Stir until the sauce is creamy, add the remaining pepper, season and bring the pepper sauce to the table on the spot.
