For the lemongrass crème brûlée, cut the lemongrass stalks lengthwise, crushing the head side with a pestle if necessary.

Simmer the lemongrass, whipping cream, milk, sugar and vanilla bean together for about 15 minutes. Strain and refrigerate.

Beat the yolks until smooth and mix with the whipped cream mixture. It is best to pour into wide, shallow soup plates (or small bowls) to a height of 2/3, place in a water bath and cook in a preheated oven at 90 degrees for about 90 minutes (or in a steamer at 90 degrees for 40 minutes until set).

Remove and let cool for 10 minutes. Sprinkle the lemongrass crème brûlée with sugar and let it caramelize in the oven at the highest possible top heat (or under the grill coil).
