Beat egg yolks, sugar and vanilla seeds with the whisk of a hand mixer for about 3 min until lighter in color.
Rinse lime while hot. Set aside half of lime(s) in wedges for garnish. Squeeze the other half. Warm the lime juice in a small frying pan. Soak gelatin leaves in water for about 5 minutes, drain. Allow gelatin to melt in lime juice.
Add sugar and tequila, stirring continuously until warm and sugar dissolves. Immediately stir into egg mixture. Chill until mixture is slightly firm around edges. Stir until smooth. Fold in whipped cream accurately.
