Clean broccoli, rinse, divide into small roses. Cook in boiling salted water for about 5 minutes, drain. Mix with veal sausage meat, season. Spread evenly on the meat. Roll up meat into a roulade and wrap with spaghetti. Peel onions and cut into wedges, except for one third. Heat lard in a roasting pan. Brown roulade in it and season. Add bay leaf, onion slices, juniper and rosemary needles. Extinguish with stock and wine. Cover and cook in oven at 200 °C for about 35 minutes. Rinse lemon and cut into slices. Cut the remaining onion into rings.

Bring the water to a boil, remove the saucepan from the stove, mix in the puree flakes. Fry onion rings and lemon slices in hot oil. Put roasting pan on the kitchen stove. Mix in sauce binder, bring to boil. Add whipped cream. Season the sauce.
