Fry the pieces of meat in a large deep frying pan with olive oil, add the onions and garlic and sauté. Add tomatoes, paprika and saffron, mix well. Add the long grain rice, mix well and pour in about half of the vegetable soup.

Stir gently, adding a little clear soup at a time, until the long-grain rice is still almost al dente.

In the meantime, clean the monkfish fillet and cut it into pieces, remove the shells from the crab tails and remove the casings.

When the long-grain rice is ready, remove the rabbit bones, add the scallops, fish, crab tails and peas and cook for ten more minutes.

Season the paella strongly with salt and freshly ground pepper, serve and garnish with lemon slices.
