Pour the red wine into a suitable pot and add the spices.

Wash 2 mandarins well under hot running water, dry with kitchen paper and grate the peel directly into the wine with a zester or grater.

Heat very slowly over as low a heat as possible. As soon as some foam forms and the wine would start to boil, remove from heat and let steep covered for 8-10 minutes.

Meanwhile, peel and finely chop the grated tangerines. Squeeze the remaining tangerines. Soak gelatin in cold water.

Drizzle tangerines with rum or Cointreau to line bowls and mix with orange marmalade. Allow to infuse.

Beat whipped cream until stiff. Slowly beat sugar with one egg yolk at a time in another bowl.

Now strain wine and heat again briefly if necessary to dissolve the squeezed gelatin in it.

Add the mulled wine, mandarin orange pieces and juice to the egg mixture. Fold in the whipped cream.

Line decorative glasses or bowls first with the marinated tangerines, then fill with the cream and chill covered with foil.

Sprinkle the mandarin red wine cream with grated chocolate before serving.
