For strawberry-red wine compote with mint, sort out the strawberries, wash and remove the stem ends. Wash the mint and pluck the leaves. Squeeze the lemon.
Bring the red wine with water, sugar, lemon juice and 1/3 of the mint leaves slowly to a boil, simmer uncovered on low heat for about 5 minutes. Add the strawberries and half of the remaining mint leaves, bring everything to the boil again and simmer for a maximum of 2-3 minutes.
Cover the strawberry-red wine compote with mint and let it infuse in the pot (or in the refrigerator) for at least 1 hour, garnish with the remaining mint and serve.
