For the ham and cream cheese rolls with breadcrumbs, carrots and cucumber, mix the cream cheese with lemon juice, salt and pepper until smooth and season to taste.

Peel the carrot and quarter it lengthwise. Peel the cucumber, cut in half lengthwise and scrape out the seeds. Cut the halves into sticks about the thickness of a finger.

Wrap a bamboo mat in plastic wrap. Sprinkle each with sesame seeds, poppy seeds or pistachios. Spread a thin layer of cream cheese on each of the cheese slices. Place coated side down on the sprinkled mat.

Spread with cream cheese and top with ham. Spread again with cream cheese and top with carrot or cucumber in center. Using the mat, roll up tightly, trim ends smooth and cut rolls into 4 pieces each.

Arrange the ham and cream cheese rolls with breadcrumbs, carrot and cucumber on a platter and serve.
