For the char from the oven, sprinkle the char with lemon juice and salt and pepper inside and out.

Peel and halve the garlic cloves and place them in the bellies of the char along with the fennel greens.

Drizzle some olive oil on 4 pieces of aluminum foil, place the fish on top, close the aluminum foil tightly and cook in the preheated oven.

Serve the char from the oven in the aluminum foil – smells wonderful when you open the package.
