Instructions:

For the sweet pear pizza, sift the flour and make a well in the center.

Crumble the yeast into the well, sprinkle with sugar and pour 4 tablespoons of lukewarm water over it.

Leave covered for a few minutes and then add 150 ml lukewarm water, oil and a pinch of salt.

Knead the dough well, it should be elastic and come away from the edge of the bowl.

Leave to rest for about an hour, covered and kept warm, until the volume has increased significantly.

Preheat the oven to 200 °C and butter a baking tray (about 40 x 20 cm).

Toast the pine nuts in a pan without fat until fragrant. Leave to cool.

Squeeze the lemon.

Peel the pears, cut them into quarters, remove the core and cut the pear pieces into slices. Mix with lemon juice to prevent the pears from turning brown.

Knead the yeast dough again on a lightly floured surface and roll out to the size of the baking dish.

Line the baking dish with the yeast dough, pulling up the edges slightly.

Spread the dough with the cranberry jam and top with the pear leaves.

Sprinkle the pine nuts on top and bake the sweet pear pizza on the middle rack for about half an hour.
