For the pear crumble, first peel the pears, quarter them, remove the core and cut the pears into not too thick slices. Quickly sprinkle with lemon juice. Melt butter in a saucepan, sprinkle in sugar and let it caramelize. Add the pears, a dash of rum or pear brandy and flavor with cinnamon and clove powder. Cover and simmer until the pears are soft.
In the meantime, butter a suitable baking dish and preheat the oven to 180 °C. Mix the baking powder with the flour and place in a bowl. Add the grated nuts, vanilla sugar, granulated sugar and the butter cut into pieces and “crumble” everything into small lumps, preferably with your hands.
Now fill the pears into the prepared form, spread the crumble over it and bake in the hot oven for 20-30 minutes until golden brown. Serve the pear crumble warm in the mold.
