Pile the flour on a flat surface, make a well. Pour in the ingredients and mix with the flour from the inside out using a wooden spoon, making sure to keep the indentation until a cohesive dough mixture is formed. Knead with your hands for about 10 to 15 minutes until the dough is smooth.

If it is too firm, carefully add a little water or oil, if it is too soft, knead in a little flour. Form the dough into a ball. Place a warmed baking bowl over it and let the dough rest for 1/2 to 1 hour. Divide the dough into 2 to 3 portions and roll out 1 unit at a time. The other portions will stay that way with the lid closed. To keep the dough from sticking, flour the surface and the pasta walker a tiny bit. From the center to the edge, roll out dough thinly (about 2 to 3 mm) and hang it in to dry over a broomstick placed over two chairs, for example. After about 20 min, roll up the floured dough from both sides toward the center and use a sharp kitchen knife to cut ribbons small to the desired width. Grasp the cut dough ribbons with a handle and shake them out onto a spread kitchen towel for a few min to dry. Make the pasta in enough boiling hot salted water to which 1 tbsp of oil has been added, in 3 to 5 min.
