Yogurt Kaiserschmarrn with Plum Compote

Soak raisins in orange juice, remove peel from ginger and dice finely. Separate the eggs and whisk the egg whites. Mix the flour with the yogurt, curd, egg yolks and milk to a nice smooth dough.

Add the vanilla sugar and stir in the beaten egg whites.

Heat two coated frying pans with clarified butter, pour in half of the batter at a time, sprinkle with raisins and cover.

Later turn to the other side and continue roasting until golden yellow color.

Tear the Schmarrn with two wooden or possibly plastic spoons. Sprinkle a little cinnamon sugar on top, add the ginger, lightly caramelize and finally form a little bit of lemon zest on top. Arrange the Schmarrn in a deep plate and sprinkle with powdered sugar. Garnish with lemon balm and serve the plum compote separately.

Tip: Use creamy natural yogurt for an even finer result!
