For the Polar Cod with Spinach Peanut Sauce, prepare the hash browns according to package directions, or in a waffle iron. Chop the onion and garlic.

Cut the spinach leaves into noodles.

Season fish fillets with salt and fry in hot olive oil on both sides. Place on a plate, season with pepper and keep warm.

Sauté the onion and garlic pieces in the same pan, add the spinach and pour the almond milk.

Add the peanut butter, lemon and ginger and simmer for a few minutes. Season the sauce with salt.

Serve the polar cod with the peanut sauce and hash browns.
