For the tomato salt, grind the sun-dried tomatoes with half of the salt in a food processor until very fine. Mix in the remaining salt.

To remove any residual moisture, spread the salt on a baking tray lined with baking paper and leave to dry for a day. During this time, mix it frequently with your hands.

When the tomato salt is completely dry, pour into jars and seal tightly.
