For the spelt crackers, mix all ingredients in a bowl or on a countertop and knead into a dough. If the dough is too soft and sticks, mix in some more flour. Remove small amounts and roll out very thinly on a floured work surface.

Cut into arbitrary pieces such as rhombuses, rombs, rectangles, squares, triangles, etc. (with a serrated knife or dough wheel) but also cut out arbitrarily with cookie cutters and place on a prepared baking sheet or silicone mat and bake at 165°C in a preheated oven. You can also brush the spelt crackers with a little olive oil or beaten egg and sprinkle with various spices or herbs such as cumin, caraway, oregano, rosemary, etc. but also poppy seeds, almond flakes or coarsely chopped nuts.

Can also be baked as a pastry sheet, but prick dough several times with a fork and break into any pieces after baking. The dough can also be colored with a little paprika powder or curry to give additional flavor.
