For the pasta with herbs, prepare a pasta dough according to the basic recipe. Add some saffron threads (amount according to personal taste) to the dough. Roll out the dough thinly with a pasta machine and cut it by hand into 8-10 cm squares.

In the next step, insert a herb leaf between each two sheets of dough. Turn this double pasta sheet once again through the pasta machine and finally cut the edges straight. Place the pasta sheets one by one in boiling salted water, cook briefly (this is very quick) and place on a towel to drain.

To serve, pour a little olive oil on a preheated (deep) plate, place a pasta sheet on top, baste it with a little melted butter and repeat this process as many times as you like. Finally, coarsely grate Parmesan cheese on top and place a fresh herb leaf on top of the pasta with herbs.
