Preparation (about 20 min):

Rinse strawberries, remove greenery, cut into quarters and fill glasses three-quarters full with strawberries. Whip yolks with mango juice, sugar, mango puree over hot water bath until creamy. Stir in the vanilla pulp.

Form the mango foam over the strawberries, top with whipped cream and place half a strawberry on top. Decorate with mint croissants and pin a mango wedge to the glass.

Our tip: As an alternative to fresh herbs, you can also use frozen ones – these also stand out for their fresh taste!
