Smoked Salmon Rolls with Avocado Tartar

Cut the avocado in half, remove the stone and remove the skin from the halves. Cut into small cubes. Immediately mix with the juice of one lemon.

Cut the tomatoes in half diagonally, scrape out the seeds and cut the flesh into small cubes. Season lightly with salt.

Mix yogurt and crème fraîche. Chop dill or chervil, add and season the sauce with salt and cayenne pepper.

Stir in the diced avocado and tomatoes.

Spread the slices of smoked salmon on the surface. On one end of each slice, place a little avocado tartar form and roll up. Arrange on a platter. Garnish with a few sprigs of dill.

Toast or fresh baguette can be served as a side dish.

Tip: Use a normal or light yogurt as needed!
