For the vegetable curry, wash the melanzani, cut into pieces, salt and set aside. The remaining vegetables, peel or wash and cut into pieces, divide cauliflower into florets.

Briefly rinse and squeeze the melanzani. Heat the sesame oil in a pot and sweat the potatoes, onion, melanzani and onion with the curry paste.

After a few minutes, add the rest of the vegetables and the ginger paste, pour in the coconut milk and beef broth and bring to a boil once.

Then put this mixture into the insert of the slow cooker and cook on HIGH for about 3.5 to 4 hours with the lid closed. Season the vegetable curry with salt and serve.
