Currant Cake From the Thermomix

Instructions:

For the currant cake prepared with the Thermomix, first remove the stems from approx. 400 g red currant and set aside.

Use the Thermomix whisk and beat 5 egg whites with sugar until stiff (2 minutes, speed 4). Then transfer the mixture and set aside.

Now mix 5 yolks, the sugar and the butter (2 minutes, speed 4). Add the water and milk (1 minute, speed 4).

Now add the flour and baking powder (30 seconds, speed 2-3).

Spread the dough on a greased baking sheet/cake pan and bake for approx. 20 minutes in a preheated oven at 180 °C (top/bottom heat).

Then mix the beaten egg whites with the currant, spread on the cake and bake again for approx. 20 minutes at 180 °C.
