Put the sausage in a frying pan and add the red wine.

Add cloves and bay leaves. Slowly bring to a boil, then steep the sausage for ten minutes before it reaches the boiling point. Remove from heat, but leave the sausage in the liquid for at least three hours.

Lift the sausage out of the marinade and dry on paper towels.

Heat the clarified butter in a frying pan. Sauté the sausage in it until brown on both sides. The sausage is also good for preparing on the broiler, in which case brush with a tiny bit of oil and roast over hot embers.

For the small household:

Two people: about 300 g of sausage, but use the entire amount of marinade.

One person: Use 1 pork sausage (about 125 g) and 1/2 marinade amount.

Our tip: Use sweet red wine for a sweet note and rather dry wine for flavorful, spicy dishes.
