For the mushroom croquettes, first cut the cleaned mushrooms into small pieces. Sauté the finely chopped onion in butter, add the mushrooms and parsley, season and cook until soft. When the mushrooms are soft, sprinkle with flour, add the milk, then the eggs and let it thicken. Pour the mixture into a buttered container and cover.

When the mixture has cooled, form 6 cm long rolls, roll in flour, egg and breadcrumbs and fry the mushroom croquettes in hot fat.
