Ricotta Cake with Cheese and Raw Ham

(*) Give refractory of about 20 cm ø, enough for 4 people.

Dice the cheese as small as possible, as well as the Parma ham.

Preheat the oven to 200 °C. Generously butter the dishes and sprinkle them with breadcrumbs.

Put the ricotta in a large enough bowl. Add flour, Parmesan cheese, egg yolks, salt and enough freshly ground black pepper and mix everything together well. Then add cheese and Parma ham cubes.

Whip the egg whites until stiff. Whisk the whites into the ricotta mixture, making sure it is smooth. Pour into the prepared mold and smooth with a spatula dipped in water.

Meanwhile, bake the ricotta cake on the spot in the oven at 200 degrees on the second rack from the bottom for thirty to thirty-five minutes. Serve warm, lukewarm or cooled.

Tip: Use your favorite ham – then your dish tastes twice as good!
