For the pumpkin spaetzle, mix the flour and salt in a bowl. First stir the eggs, then the pumpkin puree into the flour.
Stir the dough for about 5-10 minutes, then cover and let rest. Using a spaetzle slicer, spread the dough in batches into plenty of boiling salted water.
Let the pumpkin spaetzle rise to the surface, remove with a slotted spoon and mix with a little butter. Keep warm.
