Rinse the zucchini. Remove the tips and stalks. Cut the zucchini lengthwise into slices and with a peeler also lengthwise into narrow strips.

Heat salted water with oil on highest stove setting, add the ribbon noodles hin and swell for 8-10 min on 0. In the last 1-2 min add the zucchini strips to the noodles form and cook. Drain in a colander and drain well.
