For this, of course, take olive oil, add finely sliced air-dried ham and Mediterranean kitchen herbs.

Heat the oil in a large frying pan and gently fry the finely sliced ham.

Peel the potatoes, cut them into thin slices and spread them evenly on top. Fry quietly for two to three minutes, then turn the frying pan so that the ham strips come to rest on top. Then add the leaves or needles of the kitchen herbs plucked from the stems and the tomatoes cut into tiny cubes. Roast gently, tossing occasionally to turn the potatoes. Only at the end season with salt and season with pepper.

Immediately before serving, stir in finely chopped fresh kitchen herbs.

Additional dish: A piece of fried fish fillet, pickled sild or herring also goes well.

Drink: A fragrant, fresh white wine without too much acidity, e.g. a Soave from Veneto or possibly a Swiss wine – e.g. a Johannisberger (as the Silvaner is called there) from the Valais.

Our tip: Use a bacon with a strong flavor – so you give this dish a special touch!
