For the paprika fried potatoes with fried egg, wash, clean, seed and cut peppers into pieces as small as possible. Peel, wash and dice potatoes about 2 cm.

Fry in vegetable oil until golden brown all around. Add bell pepper pieces and fry for 2-3 minutes. Season with salt and pepper. Heat sunflower oil in a coated pan, season with a pinch of salt.

Add the organic eggs (the amount you want) and fry them for 3-4 minutes on a low heat. Place a lid, briefly towards the end, then season with salt and pepper.

Divide among warmed plates of paprika fried potatoes, place the fried eggs on top or next to. Sprinkle with freshly chopped parsley and serve, enjoy with a salad.
