For the rainbow cake, separate the eggs and beat the egg whites until stiff. Beat yolks, sugar, lemon juice, lemon zest until creamy. Add flour, milk, baking powder and oil separately, fold in the snow.

Divide the dough among 6 bowls and color each with the colors red, orange, yellow, green, blue, purple. Put 3 tablespoons of red in the center of the cake layer. Then add 3 tablespoons of each of the other colors in turn to the center.

Repeat this process until all colors are used up. Bake the rainbow cake at 180 °C top/bottom heat for approx. 1 hour.
