For the nut hearts, cream butter with sugar, vanilla sugar and lemon zest, stir in yolks, stir in flour briefly and knead quickly on pasta board. Wrap dough in plastic wrap and refrigerate.

In the meantime, prepare the filling: Boil water with sugar, vanilla sugar and lemon zest, add nuts and roast well. Roll out the dough, cut out hearts and bake at approx. 160 °C for 8-10 minutes until light.

Stir the rum into the cold nut filling and put a small blob on the bottom of each half heart, place the remaining hearts on top and press down carefully until the filling is visible at the edge.

Heat the glaze according to instructions, dip the tops of the filled hearts, place on baking paper and let dry overnight.
