Instructions:

For the rainbow cake, first prepare the dough. For the dough, first mix together the butter and sugar. Then slowly add the egg whites.

Stir the whole thing until it forms a mass. Now slowly add the flour, baking powder and pinch of salt, alternating with the milk until you have a nice dough.

Divide the dough evenly among 6 bowls. In 4 of the 6 bowls, stir in the food coloring. Add cocoa powder to the 5th bowl until the dough is a nice brown color.

The 6th bowl stays as it is. Now bake one color at a time at about 180 degrees for 10 minutes. Repeat this with each color.

Let the doughs cool down well.

For the filling, mix sugar with egg yolks and vanilla sugar. Beat the egg whites until stiff and slowly fold in. Now add the mascarpone.

To make everything nice and firm, add 2 melted sheets of gelatin. Cut the cooled dough into equal-sized pieces (it’s best to take a paper template and “cut” out the dough).

Spread the cream between the doughs. How the colors are arranged is up to you. Around the cake also smear the cream and put in the refrigerator for about 2 hours.

Meanwhile, heat the milk chocolate in a water bath until it is liquid. Using an angled palette, pour the chocolate over the cake and smooth it out.

Allow the finished rainbow cake to cool again.
