For the potato base dough, press cooked potatoes through a press and add the semolina, salt and flour to this still hot mass.

Mix with a wooden spoon and let stand for 20 minutes. Then add the butter and the egg. Let rest again for at least 20 minutes, then portion the dough, fill with any fruit and cook the dumplings in simmering (not bubbling) water for about 15 minutes.

If desired, turn the fruit dumplings in butter crumbs. You can use cherries, apricots, strawberries, blueberries as well as plums, gruel or even kiwis as filling.
