For the pear jam, wash the pears, remove the stem and core and cut into small cubes. Grate the peel from the lemon and squeeze the lemon.

Mix the juice and lemon zest together and roll the pear cubes in it. In a large saucepan, bring the apple juice to a boil with the sliced vanilla bean and reduce by half.

Add the jelling sugar and pears with the juice and continue to boil for 15 minutes, stirring constantly.

Then immediately fill into clean jars and close tightly.
