Instructions:

Sift the flour into a suitable bowl. Add butter or light butter in pieces, egg yolks and water. Quickly knead everything with your hands into a smooth dough. Wrap the dough in plastic wrap and let it rest in the refrigerator for 2 hours.

Preheat the stove to 175 degrees. Roll out the dough thinly, line the greased baking tray with it, prick a few times with a fork and pre-bake the dough in the middle of the oven for 10 minutes (gas: level 2).

For the topping, peel the onions and cut them into thin rings. Remove the pork rind from the bacon, cut the fat and meat into small cubes. Heat butter in a large frying pan and fry the bacon in it. Then add the onions and fry them, turning, until golden brown. Season everything with caraway seeds, salt (carefully) and pepper.

Roughly grate raclette cheese and Emmentaler. Mix milk, egg and maizena (cornstarch) well. Spread onions evenly on the pre-baked dough, sprinkle cheese, spread milk mixture evenly on top. Bake the cake in the middle of the oven for 30 minutes, until the surface is nice and golden brown. Bring to the table immediately.
