To make the Oatmeal Chocolate Waffle Cookies, first preheat the waffle iron to medium heat.
In a large bowl, beat the butter with the molasses sugar with a hand mixer until a soft mixture is formed.
Add the eggs and vanilla extract and continue mixing until everything is well combined.
Combine the flour, baking soda and salt in a medium bowl. Add the dry ingredients to the wet ingredients and mix until the flour is mostly incorporated.
Fold in the rolled oats and chocolate drops and stir through.
Spray both baking surfaces of the waffle iron with baking release spray.
Spoon a heaping tablespoon of batter onto each section of the waffle iron, leaving enough room for the cookies as they enlarge. Close the lid and bake until the cookies begin to firm up and brown. This will only take about 2-3 minutes, depending on the heat of the waffle iron. The cookies should still be a little soft when you take them out of the waffle iron, they will firm up as they cool. Transfer the cookies to a cooling rack to cool.
Repeat steps 6-8 with remaining batter until all oatmeal chocolate waffle cookies are baked.
