For stuffed zucchini, cut zucchini in half, hollow out and blanch. Dice remaining pulp, lightly fry the onion, add paprika powder and tomato paste.

Immediately “extinguish” with zucchini flesh and tomatoes and let cool. Mix mince with zucchini mixture, season and taste. Depending on the consistency, add breadcrumbs.

Fill the zucchini, spread with 1/2 cup creme fraiche and sprinkle with grated cheese. Cover and “bake” at 180 °C for about 1 hour.

Cover 15 minutes before the end and increase the temperature. Thicken the resulting gravy with the remaining crème fraîche and add beef broth if necessary.
