Pasta dishes are always a good idea!

The liver is put through a meat grinder together with the onion and parsley. Prepare a firm spaetzle dough from flour, eggs and salt, add the chopped liver and, if necessary, a little water, knead everything together heartily and let the dough stand for 1 hour. Now, one after the other, put small portions of the dough on a moistened kitchen board, scrape narrow, long spatulas with a wide kitchen knife into boiling salted water and let them do so until they float to the surface. Take them out with a slotted spoon, swim them in clear hot salted water, arrange them in a heated baking dish and fry them with golden brown roasted onions. It goes well with white cabbage salad or potato salad.
