Instructions:

For the goat cheese pralines with pumpkin seed oil remoulade, first mix well the cream cheese with honey, thyme, salt and pepper and chill briefly so that the mass becomes a little firmer and thus easier to process.

Portion the chilled cheese mixture with a teaspoon and form small balls from it. Roll some of the chocolates in chopped pumpkin seeds and the rest in grated pumpkin seeds.

For the remoulade, mix well the mayonnaise with pumpkin seed oil, salt, pepper and tomato vinegar. Then fold in the diced vegetables.
