For the shortcrust pastry foam wheels prepare shortcrust pastry. To do this, quickly knead all ingredients into a dough. Leave to rest in the refrigerator for approx. 2 hours.

Preheat the oven to 150° C hot air.Line a baking tray with baking paper.

Separate the egg whites. Beat the egg whites with a pinch of salt. When it starts to turn whitish, gradually add the sugar and beat until stiff.

Sprinkle the work surface with flour. Roll out the dough on it and cut out half round filled discs and half round discs with a hole with cookie cutters. Line a baking tray with baking paper and place the cookie slices on it, spacing them slightly apart.

Pour beaten egg whites into a piping bag and pipe foam rings around the edge of the perforated discs.

Bake the shortbread foam wheels in the oven for about 20 minutes.

Then let cool and glue together with jam one cookie base and one kettle disc with foam each.
