Noodle dishes are just always delicious!
Heat the chicken soup over medium heat in a large saucepan. Soak noodles in a baking bowl of boiling hot water for 3-5 min.
Drain noodles and add to clear soup. Soak shiitake mushrooms in a baking bowl of boiling hot water for 5 min. Drain, squeeze gently, cut into flakes and add to the clear soup. Add chicken, bamboo shoots and ginger and stir well. Cook for 3-4 minutes until chicken is tender. Stir in remaining ingredients and make another 1-2 min. Taste and season to taste with a tiny bit more vinegar or chili, if desired.
Fill the soup into soup bowls and bring to the table on the spot.
Briefly marinate the sambal ölek. Pour in 1 liter of clear soup, good.
