For the grissini, knead a smooth yeast dough from the given ingredients. Let the dough rise in a warm place for 1 hour. Knead the dough again and divide it into 8 parts.
Form these parts individually into long rolls about 1 cm thick. Divide the rolls in the middle to make 16 sticks. Place them as straight as possible on a baking sheet and let them rise for another 20 minutes.
Brush all sticks with a thin layer of milk and bake at 180 °C for 10-15 minutes. The sticks should be golden brown.
