For the moose cookies with 3 kinds of flour, first mix the different kinds of flour with a little baking soda. Crumble the butter into the flour. Mix in the drinking chocolate powder and spices.
Make a well in the center, pour in the honey, cherry rum and beat in the egg. Quickly knead into a dough. Wrap in plastic wrap and let rest in the refrigerator for at least 1 hour.
Roll out the dough, cut out moose and place on a greased baking tray. Bake at 160 °C convection oven for about 15 minutes and let cool. Form very small balls with the marzipan, flatten and place as an eye.
Melt the chocolate and place a dab on the marzipan.
