For balls of happiness, first toast oat flakes, sunflower seeds and sesame seeds briefly in the oven – for a maximum of 8 minutes at 170 °C. Take out, let cool or just quickly put in the freezer.

Then mix with nuts, coconut, flax and sunflower seeds, cardamom and cinnamon.

Add elderberry syrup and water and knead well. Gradually add chopped dates and apricots and incorporate. (If you have a food processor, save the chopping and kneading).

Form small balls. Then roll in grated nuts and/or coconut or cocoa, depending on your taste.

Last but not least, let the balls of happiness harden in the freezer for at least 30 minutes. In an airtight container, the balls of happiness can be stored in the refrigerator for up to a week, and in the freezer for up to a month.
