For the coconut-ginger rice, boil the rice with the coconut milk and water. Add salt, lemon zest and ginger. Steam closed for 10 minutes until all the liquid is absorbed.

Meanwhile, briefly toast the coconut flakes in a dry pan until golden brown. Mix coconut flakes to the finished rice. Serve the coconut-ginger rice.
