Instructions:

Sugar in a chrome steel pan until light brown, reduce heat. Add the minced walnuts, roast briefly, place on a parchment paper form to cool. Chop. Cook vanilla parfait (see below), mix in the caramelized tree nuts before freezing.

Vanilla parfait: mix egg yolks with sugar (1) until the mixture is light in color. Cut vanilla stem lengthwise, scrape out seeds and stir into egg yolk mixture. Whip cream until stiff, add to mixture. Beat egg whites until stiff, add sugar (2) to the snow form, continue beating briefly, then mix into the mixture with a rubber scraper accurately but thoroughly, pour into suitable containers on the spot and freeze.

Suitable vessels: portion molds of any kind, coated baking pans (spread uncoated molds with parchment paper) or, if forming balls after freezing, a suitable freezer container.

Serve: Divide the warm nut sauce evenly among the plates, add the parfait and bring to the table on the spot.

Prepare: Turn out parfait a few time before serving and perhaps cut into tranches, keep in freezer repeatedly until serving. Also prepare the sauces.

Note: Do not freeze leftover thawed parfait a second time.
