For the yogurt cake with strawberries, first line a cake springform pan (26 cm ø) with parchment paper.

For the base, crush the butter cookies as finely as possible (preferably in a freezer bag). Mix them with the melted butter. Spread this mixture on the cake base and press down evenly.

For the yogurt cream, soak the gelatin in enough cold water for 5 minutes. Stir the yogurt with the vanilla sugar, powdered sugar, lime juice and orange juice. Place the gelatin, dripping wet, in a small saucepan and let it melt over low heat. Stir into the yogurt mixture.

Wash the strawberries, remove the greens and cut into very small pieces. Set aside about 200 g of them for garnish, carefully stir the remaining berries into the yogurt cream.

Empty the yogurt cream on the dough in the springform pan and let it gel in the refrigerator for 3-4 hours. Decorate the yogurt cake with strawberries with the remaining berries and serve chilled.
