For the rice casserole, heat the rice with the milk in a pot. Add salt and cook over medium heat until tender. Then remove from heat and let cool.

Meanwhile, beat the butter with the powdered sugar until fluffy, add the lemon zest. Gradually mix in the yolks and then mix everything with the rice.

Beat the egg whites with granulated sugar until stiff and then carefully fold the beaten egg whites into the rice mixture. Grease a baking dish with butter and sprinkle with breadcrumbs.

Pour the rice into the dish and bake in a preheated oven at 175 °C for about 45 minutes.
