For the almond rings with apricot jam, first prepare the shortcrust pastry. First mix the dry ingredients in a bowl. Then quickly knead in the egg yolk and butter. Do not knead too long! Form the dough into a ball, wrap it in plastic wrap and let it rest in the refrigerator for at least 2 hours.

Preheat the oven to 170 °C and line a baking tray with baking paper.

Sprinkle the work surface with a little flour to prevent the dough from sticking. Roll out the dough thinly and cut out round cookies. Cut a hole in the center of half of the cookies. Carefully place the cookies on the baking sheet.

Whisk egg yolk with milk and brush the perforated circles with it. Spread the almond flakes on top.

Place in the oven and bake for about 12 minutes. Remove from the oven and let cool.

When the almond rings have finished cooling, whisk the jam until smooth and spread it on the circles without holes. Place one circle with a hole on top of each.
