For spicy marinated melanzane, wash the melanzane and cut into thin slices, sprinkle with salt and let stand. Squeeze the melanzane slices and dry them with kitchen roll.

Brush the slices thinly with oil on both sides, fry in a non-stick pan over medium heat, season with pepper and let cool slightly.

Cut mozzarella into thin slices, place one mozzarella slice on each melanzanese slice, roll up and secure with toothpicks.

Wash chili peppers, cut lengthwise, remove seeds and sidewalls and cut into rings.

Peel garlic and chop into slices. Mix both with 1/2 tsp salt, vinegar and the remaining oil. Wash lemon while hot and cut into slices.

Layer the melanzani rolls with the lemon slices in a bowl and pour the sauce over them. Cover and let marinate for one night.

Use high quality extra virgin olive oil for spicy marinated melanzani!
